Senior Manager, Museum F&B Operations (Ref:19248)

Reporting to Head, Museum Retail and Commerce, the job incumbent takes a leading role in M+ brand ownership, profit & loss, people development, concept development opportunities and all the operational aspects. The role also supports and advises commercial retail on all F&B aspects directed to the local market and M+ visitors.


You will be responsible for:

  • working closely with Head, Museum Retail and Commerce to provide recommendations to the M+ F&B internal and external business counterparts towards maximising revenues and profitability for their business units;
  • reviewing and managing the annual budget, five-year plan, monthly profit & loss review and sales targets inclusive of marketing budget, profitability and CAPEX for M+ F&B operations;
  • working closely with counterparts to ensure M+ F&B operations are cost effective and efficient and align to M+ Brand Standard Manual F&B operations checklist;
  • reviewing all Quality Assurance Initiatives and monitoring the financial performance of the restaurant operators and ensuring the operators have an effective forecasting process;
  • keeping abreast with market practices locally and in the region, evolving the product concepts to match with M+ brand image;
  • managing the wine cellar inventory and sales performance and defining wine list structure and pricing strategy;
  • collaborating with counterparts to develop business synergy and fostering “Out of the box” thinking to enhance the M+ destination in the local community and oversea organisations;
  • involving in developing and delivering training programmes with relevant parties to ensure that frontline colleagues are equipped with right level of skills and product knowledge to create a unique experience and memory for the guests;
  • creating an attitude of pride without arrogance to the team, high level of motivation and ensuring full compliance with regulatory requirements; and
  • performing any other duties as may direct by supervisor when necessary.


You should:

  • possess a recognised degree in Hotel Management or equivalent;
  • have at least 12 years of experience in Hotel Food & Beverage or large Food & Beverage institutions which 8 years at managerial position;
  • demonstrate strong negotiation, influencing, collaboration and problem solving skills with good business acumen and numerical sense to drive sales targets and explore new business opportunities;
  • possess strong leadership capability and attributes which aim to deliver the best business result and effective team management particularly experience in managing a large number of operational staff;
  • demonstrate good knowledge of business management, marketing planning and Food & Beverage support systems such as front and back of house protocol for fresh food & waste management, IT systems, kitchen compliance and service hygiene and etiquette; and
  • have good communication skills, be proficient in both written and oral English and Chinese, proficiency in Putonghua is an advantage.
